Pollo a la Brasa "Peruvian Chicken"



Ingredients:


Chicken:

  • 3lbs chicken (thighs, breasts or mixture)

  • 3 tsp garlic, minced

  • 2 tbsp lime juice

  • 1 tbsp paprika

  • 2 tsp oregano

  • 2 tsp ground cumin

  • 1/3 cup olive oil

  • 1 1/2 tsp salt

  • 1 tsp pepper

Green sauce:

  • 1/2 cup greek yogurt

  • 2 cups cilantro

  • 1-2 serrano peppers (depending on how spicy you want) Or 1/2 green pepper

  • 2 tsp minced garlic or 2 whole garlic cloves

  • 2 tbsp lime juice

  • 1 tsp honey

  • 2 tbsp olive oil

  • Salt & Pepper to taste

Preparation:

  1. Add all chicken ingredients to a large plastic bag and massage around to make sure the chicken is fully covered by the marinade.

  2. Place in fridge for 1 hour.

  3. While the chicken marinates, make the green sauce.

  4. In a food processor or blender, add all green sauce ingredients. Blend until smooth.

  5. In a large pan on medium high heat, add oil.

  6. Add chicken. Sear chicken until browned on each side. Make sure internal temp is 165. *cook chicken in batches. *you can finish the chicken in the oven if not up to temp.

  7. Using chicken broth, water or white wine, deglaze the pan and pour over chicken.

  8. Plate chicken and add green sauce to the top.

  9. Serve with rice and Enjoy!

Tips:

  • Traditionally this dish is made as a rotisserie chicken. You could always buy a rotisserie chicken pre-made and make the green sauce to pour over.
