Pumpkin Waffles


Ingredients:

  • 1 3/4 cups flour

  • 1 tbsp brown sugar

  • 1 1/2 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp pumpkin pie spice

  • 1 tsp salt

  • 1 1/4 cups buttermilk

  • 1 cup canned pumpkin puree

  • 2 large eggs

  • 1/4 cup butter, melted

Preparation:

  1. Preheat oven to 200 degrees. *You will use this to keep your waffles warm.

  2. Plug in waffle maker.

  3. In a large bowl, combine dry ingredients. Stir to combine. Set aside.

  4. In a second large bowl or 8 cup measuring cup, Add wet ingredients. Stir to combine.

  5. Add dry ingredients to the wet and stir to combine.

  6. Using a 1/2 cup to 1 cup pour mixture onto greased waffle iron. (*depending on how big your waffle iron is)

  7. Cook until golden brown- 3-4 mins (your waffle iron might have a ready light- use that until golden brown)

  8. Place in oven as you go to keep the warm.

  9. Serve immediately topped with maple syrup and butter.

  10. Enjoy!

Tips:

  • Try using flavored butter! Cinnamon butter etc.

  • Try adding some chocolate chips for a fun added taste or pecans!
