Quick Chicken Salad

Ingredients:

  • 1 - 12.5 oz Canned Chicken (water drained)

  • 2 TBSP - Diced Red Onion

  • 1/4 Cup - Pepperoncini

  • 1/4 Cup - Celery, diced (about 1 stalk)

  • 2 TBSP - Candied Jalapeños with juice plus some extra

  • 4 TBSP - Mayo

  • Salt & Pepper to taste

Preparation:

  1. Combine all ingredients.

  2. Serve and enjoy!

Tips:

  • You don't have to use the jalapeños but the syrup is so good. Honestly you could just add that without the jalapeños for a little less spice. These particular candied jalapeños are from a local place here in Texas. They are THE BEST. I put them on and in practically anything I can- burgers, pizza, butter chicken etc.

  • If you want to do a smaller can, just half all the ingredients. You could also eyeball and change the measurements of these to whatever you wanted!

  • If you don't have canned chicken, you can used grilled chicken, boiled chicken, leftover chicken from another recipe, etc.

  • This recipe will also work for Tuna as well!
