
Ingredients:
1 pkg microwavable quinoa *cook according to pkg directions
1 cup tomatoes
2 cups fresh spinach, torn into pieces
1 tbsp olive oil
1/2 cup Feta cheese
Salt & pepper to taste
Preparation:
In a microwavable bowl, cook spinach for 1 min.
In a large bowl, add quinoa, tomatoes, cheese, olive oil and spinach.
Mix until incorporated then add salt and pepper to taste.
Serve & Enjoy!
Tips:
I used central market microwavable red & white quinoa but you can use any kind. If you don’t have microwavable, you can use regular quinoa. You can also make this with brown rice or white rice.
Grape tomatoes work great I just cut them up in to 4 pieces but regular tomatoes are fine as well!
