Ingredients:
1 Package - Okra
6 - Scallions
1-1/2 TBSP - Olive Oil
1 Tsp - Salt
1/2 Tsp - Pepper
1 Tsp - Garlic Powder
Preparation:
Preheat oven to 425.
Rinse okra, cut tops off, and cut lengthwise.
Cut scallions (green onions) into 1 inch pieces.
Place okra and scallions on a sheet pan.
Drizzle olive oil, sprinkle with salt, pepper, and garlic powder. Toss to combine.
Roast okra for 30 minutes, tossing every 10 minutes.
Tips:
Okra is naturally slimy. By roasting it, you will cook some of that sliminess out.
Use as a side dish for a lot of different meals- Chicken, Steak or Fish.
