Salmon w/ butter sauce

Ingredients:

Sauce:

  • 2 tbsp butter

  • 1 tbsp honey

  • 2 tsp garlic, minced

  • 1/2 tbsp lime juice

Ingredients:

  • 1lb salmon, cut into 2-3 pieces

  • Salt & pepper to taste

  • 1 tbsp olive oil

Preparation:

  1. Preheat oven to 350 degrees.

  2. Season each filet with salt and pepper.

  3. Using a cast iron skillet (or regular skillet but I think the cast iron works best!) heat on medium high and add oil.

  4. Place salmon filets skin side up. Cook for 5 mins or until you get a really good brown sear on the filet.

  5. Flip filets over and then place in the oven.

  6. Cook filets for 5-10 mins or until internal temp reaches 145 degrees. *The fish will feel firm when you enter the temp prob so that is a good sign is done.

  7. While the salmon filets are in the oven, make the butter sauce.

  8. Add butter to a small skillet and melt. Add garlic and cook for 1 min. Add honey and stir then add lime juice. Stir and set aside.

  9. Once filets are finished, top with butter sauce.

Tips:

  • This is literally my FAVORITE salmon dish. So easy and it’s done in less than 30 mins. I would suggest getting your salmon fresh at the fish counter. You can also ask them to get it cut into pieces. Atlantic salmon is the best in my opinion but you can get sockeye. The sockeye has a different taste so I prefer the Atlantic.

  • If you don’t want to add honey or lime, you could do this recipe with just the butter and garlic.

  • Keep on eye on your sear. I like it nice and brown and sometimes it can take longer than you think to get that nice color. Don’t be intimated!
