Sausage, Sweet Potato, & Kale Soup


Ingredients:

  • 6 Slices - Bacon

  • 1 Lb - Hot Italian Sausage (links or ground*)

  • 1 Each - Onion

  • 5 Cloves - Garlic

  • 1 Lb - Sweet Potatoes

  • 4 Cups - Chicken Bone Broth

  • 5 Cups - Kale

  • 1 Cup - Canned Coconut Milk (full fat)

  • Salt & Pepper, to taste

Preparation:

  1. Dice bacon into 1" pieces and remove casings from sausage if using links.

  2. Heat a soup pot over medium heat and cook bacon until crisp.

  3. Remove bacon with a slotted spoon, leaving bacon grease in pot.

  4. Add sausage, breaking up any large pieces and cook until done.

  5. Meanwhile, dice onion, mince garlic, and chop kale being sure to remove the tough center stalk.

  6. Peel sweet potatoes and cut into 1" chunks.

  7. When sausage is cooked, remove from pot with a slotted spoon.

  8. Add onion to the remaining grease and cook about 5 minutes or until translucent.

  9. Add garlic and cook for 1 minute, then add potatoes and salt and pepper.

  10. Add broth, turn up heat to medium high and bring to a boil.

  11. Reduce heat and let simmer for about 10 minutes until potatoes are tender.

  12. Add coconut milk and sausage. Stir to combine.

  13. Add kale and cook for about 3-5 minutes until kale is wilted and bright green.

  14. Toss in bacon and stir.

  15. Serve and enjoy!

Tips:

  • When opening a can of coconut milk, the fat solids will usually settle on the top. Be sure to stir until well combined before measuring out.

  • This soup thickens as it sits so you may want to add some additional broth when reheating.

  • Get creative! Lessen the broth when cooking to make more of a stew like consistency and serve over a bed of cauliflower rice for a nice hearty meal!
