Sausage & White Bean Soup


Ingredients:

  • 1 Lb - Hot Breakfast Sausage

  • 1 Each - Onion

  • 1 (15 oz) Can - Cannellini Beans

  • 1 (14.5 oz) Can - Diced Tomatoes

  • 1 Each - Small Green Cabbage

  • 6 Cups - Chicken Stock

  • 2-3 TBSP - Italian Seasoning

  • Salt & Pepper

Preparation:

  1. Brown sausage in a large soup pot over medium heat.

  2. Once sausage is almost completely cooked, add diced onion and continue cooking until onion is translucent and sausage is completely cooked.

  3. Add beans, tomatoes, and seasoning. Stir to combine.

  4. Dice cabbage into bite sized pieces and add to pot.

  5. Add stock and carefully stir to incorporate all ingredients.

  6. Simmer on medium heat for 5-7 minutes or until cabbage is tender.

  7. Serve and enjoy!

Tips:

  • You can substitute the sausage with either mild or italian sausage; however, hot breakfast sausage gives the most flavor. Adjust seasonings as needed.

  • Italian seasoning is just a blend of different spices. If you don't have any on hand, a combination of oregano, thyme, and basil work fine.

  • Get creative! If you're not a fan of cabbage, use pasta, rice, or zucchini noodles.
