
Ingredients:
4 Each - Pears (any variety, not too firm)
16 Oz. - Button or Cremini Mushrooms, finely chopped
1/4 Cup - Onion, finely diced
1/4 Cup - Blue Cheese, crumbled
1 TBSP - Butter
1 TBSP - Olive Oil
1/2 Tsp - Thyme
Fresh Basil
Honey (for drizzling)
Salt & Pepper
Preparation:
In a small pan over medium-high heat, melt butter and olive oil.
Add onions and sauté a couple of minutes until translucent.
Add mushrooms and leave undisturbed for 3-4 minutes until they begin to carmelize. Then stir and add thyme, and salt and pepper to taste.
Continue cooking another 1-2 minutes. Set aside to cool.
Meanwhile, slice pears in half lengthwise. Remove center core and make a well with a melon baller or spoon being careful not to go all the way through.
Once mushrooms are cooled, spoon mushroom mixture into pear, then top with blue cheese, basil, and drizzle with honey.
Serve and enjoy!
Tips:
This recipe works best with softer pears as they are not cooked. If your pears are too firm you can bake them first to soften.
Get creative! Don't like blue cheese? Use one of your favorite crumbling cheese.
