Sheet Tray Nachos

Sheet Tray Nachos

  • 1 lb ground beef

  • 1/2 onion diced

  • 1/2 tbsp cumin plus additional for yogurt mixture

  • 1 tbsp chili powder plus additional for yogurt mixture

  • 1 tsp salt plus additional for yogurt mixture

  • 1 tsp pepper plus additional for yogurt mixture

  • 1 tbsp oregano

  • 1 tbsp oil

  • 2 diced tomatoes

  • 1 avocado sliced

  • 1 cup arugula

  • 2 cups of shredded cheddar or Mexican cheese

  • 1 bag of tortilla chips

  • 1/2 cup greek yogurt (can substitute for sour cream as well)

  1. Drizzle oil in a frying pan on medium high heat.

  2. Add onions and sauté for 3 mins.

  3. Cook ground beef until browned.

  4. Add seasonings and mix. Set aside.

  5. Using a sheet pan, spread tortilla chips out evenly. *You may not use the whole bag- more like 1/2 to 3/4ths of it depending on your preference.

  6. Next add the ground beef over the chips.

  7. Add arugula on top of the beef.

  8. Add cheese on top of the arugula.

  9. Place sheet tray into oven on broiler for about 5 mins or until cheese is melted.

  10. While nachos are in the oven, add greek yogurt to a small bowl and add salt, pepper, cumin and chili powder to taste. (you can do about 1/2 a tsp of the spices and salt and pepper to taste)

  11. Once cheese has melted, remove from oven and place on stove.

  12. Top with diced tomatoes and avocado.

  13. Finish nachos by topping with greek yogurt mixture.

Notes/Quick Tips:

  • You can substitute the beef for turkey or even pork!

  • If you are a vegetarian, you could even add tofu or leave the meat off- you could even add beans instead.

  • You can add any kind of veggies you want- Don’t have arugula? Use spinach!
