1lb ground turkey
1/2 onion, diced
1 can of corn, drained
1 can black beans, drained
1 can of tomatoes and green chilies (Rotel)
1 8oz container of cream cheese
1 tsp salt
1 tsp black pepper
1 tbsp oregano
1/2 tbsp cumin
1/2 tbsp chili powder
1/2 tbsp garlic powder
1/2 tbsp onion powder
1/2 box of elbow macaroni, cooked
1 tbsp olive oil
Heat pan on medium high. Add oil.
Add onions and sauté for 3 mins. Add turkey and cook until no longer pink
Add seasonings and mix.
Add corn, black beans and tomatoes & green chilies.
Add cream cheese and mix until thoroughly melted.
Add cooked macaroni and enjoy!
Notes/Quick Tips:
Top with cilantro, sour cream or shredded cheese.
Don’t have black beans? You can use pinto, kidney beans or whatever can of beans you have.
If you don’t like spicy, you can just add a canned of diced tomatoes.
