Snickerdoodle Bread


  • 3 cups flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup butter, softened *Let sit out about an hour at least

  • 2 tsp cinnamon

  • 2 cups sugar

  • 4 eggs

  • 2 tsp vanilla

  • 1 cup sour cream

  • 1 package cinnamon chips

  • 1 tbsp flour

Cinnamon Sugar Topping

  • 2 tbsp sugar

  • 2 tbsp cinnamon

  1. Preheat oven to 350 degrees

  2. Grease mini loaf pan, muffin pan or loaf pan with cooking spray and set aside.

  3. In a medium to large size bowl, add flour, baking powder, salt and cinnamon. Whisk until incorporated and set aside.

  4. In the bowl of a stand up mixer or a large bowl with a hand mixer, cream together butter and sugar until whipped.

  5. Add egg one at a time while mixing.

  6. Add vanilla and sour cream and mix.

  7. Add flour mixture a little at a time and scrape the sides to insure it is fully mixed.

  8. In a small bowl, mix together cinnamon chips and flour. *This helps the cinnamon chips stay in place instead of sink to the bottom.

  9. Turn mixer off, fold in cinnamon chips.

  10. In that same small bowl, add the cinnamon & sugar mix for the topping.

  11. I used a mini loaf pan- Spoon in each mold about 2/3.

  12. Once all is filled, sprinkle about 1/2 tbsp to 1 tbsp on top each one. *If using a loaf pan, split between 2 batches.

  13. Place in oven for 35-45 mins or until toothpick comes out clean. *If using muffin pan, your times might be less, be sure to check at the 20 min mark. If using a loaf pan, it will take 45-1hr.


Notes/Quick Tips:


  • Pecans are a great addition to this. Go ahead and add 1 cup chopped nuts to your batch. Don’t have pecans, try any nut.

  • These make great gifts for the holidays!

  • If you don’t have cinnamon chips, you can try butterscotch or chocolate chips to this recipe.
