Southwest Egg White Quesadilla


  • 2 egg whites

  • 1 southwest tortilla

  • 1/4 cup shredded cheddar jack cheese or a little extra whatever you like!

  • 1/2 tsp of onion seasoning (I used Trader Joe’s Onion Salt)

  • Salt to taste

  • Salsa, topping (I used Trader Joe’s Tomatillo & Roasted Yellow Chili Salsa)

  • Avocado slices, topping

  1. Heat sprayed, oiled or buttered frying pan on medium.

  2. Pour egg whites into heated pan and add seasonings.

  3. Once egg whites are almost completely white, add cheese then top with tortilla.

  4. Flip tortilla and cook for a min or too until brown.

  5. Flip tortilla in half and remove from pan.

  6. Top with avocado and salsa.


Notes/Quick Tips:

  • You don’t have to use egg whites, you can sub with one egg.

  • If you don’t have a southwest tortilla, any kind will do.

  • You can use cheddar for this, Mexican cheese etc.

  • Serve with fruit on the side or hash browns.

  • Make it your own! Add whatever you like into the eggs- I.e. bacon, sausage, veggies etc.
