Spicy BBQ Baked Beans


Ingredients:

  • 2 Cans - Pinto Beans

  • 1/2 Each - Onion

  • 4 Cloves - Garlic

  • 3 TBSP - Tomato Paste

  • 3 Each - Chipotle Peppers in Adobo Sauce

  • 1/4 Cup - Water

  • 1 Each - Orange

  • 2 TBSP - Light Brown Sugar

  • 1 TBSP - Molasses

  • 1 Tsp - Soy Sauce

Preparation:

  1. Drain pinto beans but do not rinse. Set aside.

  2. Chop onion and peel garlic.

  3. Place in a blender along with tomato paste, chipotle peppers, water, sugar, molasses, soy sauce, and juice from 1 orange.

  4. Blend until smooth.

  5. Place in small pot on stove over medium low heat and add beans.

  6. Stir to coat, then simmer for about 10 minutes.

  7. Serve and enjoy!

Tips:

  • You can adjust the heat by adding more or less chipotle peppers. Like it even hotter? Just add some of the adobo sauce for an extra spicy kick.

  • Get creative! Serve with rice and grilled meat, or slightly mash and serve as a dip with some tortilla chips. Yum!
