Teriyaki Chicken

Ingredients:

  • 1 lb - Chicken Breast, boneless, skinless

  • 1 TBS - Cornstarch

  • ¼ Cup - Light Brown Sugar

  • ¼ Cup - Soy Sauce (reduced sodium preferred)

  • ½ Tsp - Ground ginger

  • 2 Cloves - Garlic

  • 2 TBS - Rice Vinegar (unseasoned)

  • Salt

  • Pepper

  • 2 TBS - Olive Oil

Preparation:

  1. Cut chicken into cubes and season with salt and pepper.

  2. Heat olive oil in pan over medium high heat. Add chicken.

  3. While chicken is cooking, whisk together in a small bowl, cornstarch, light brown sugar, soy sauce, ground ginger, garlic, and rice vinegar.

  4. When chicken is browned and fully cooked, reduce heat and add sauce.

  5. Stir to coat chicken and cook until sauce is reduced by half and has thickened.

  6. Serve and enjoy!

Tips:

  • Use apple cider vinegar in place of rice vinegar.

  • Get creative! Serve with a side of rice and steamed broccoli or add other veggies to pan with sauce such as cooked asparagus and red bell pepper to make a stir fry.
