Tilapia with Grapefruit Salsa


Ingredients:


For Fish:

  • 2 Each - Tilapia Fillets

  • 1/4 Tsp - Ground Coriander

  • 1/4 Tsp - Ground Ginger

  • 1/4 Tsp - Salt

  • 1/4 Tsp - Black Pepper

  • 1 TBSP - Olive Oil

For Salsa:

  • 1 TBSP - Olive Oil

  • 1 TBSP - White Wine Vinegar

  • 1 Each - Avocado

  • 1 Each - Grapefruit

  • 2 TBSP - Red Onion

  • 1 Cup - Spinach

  • Salt & Pepper, to taste

Preparation:

  1. Begin preparing the salsa by dicing the onion and avocado,rough chopping the spinach, and segmenting the grapefruit and cutting each piece in half.

  2. Place ingredients in a bowl, then in a separate bowl, whisk together olive oil, vinegar, and salt and pepper to taste. Set aside.

  3. For the fish, make the rub by mixing together coriander, ginger, salt and pepper.

  4. Pat fish with a paper towel to remove excess moisture, rub with olive oil, then sprinkle seasoning evenly over both pieces, both sides.

  5. Heat olive oil in a saute pan over medium high heat.

  6. Once oil is heated, place fish in pan and cook until browned on one side.

  7. Flip fish and finish cooking until white and flaky.

  8. Place salsa on serving dish, top with fish and fresh parsley.

  9. Serve and enjoy!

Tips:

  • Substitute any kind of hearty, white fish such as halibut or cod.

  • Try grilling the fish instead of pan frying.

  • Although segmenting a grapefruit is fairly simple, you may substitute it by buying prepared grapefruit. Just be sure it's in water or natural juices and not corn syrup.

  • Get creative! Serve over a bed of mixed greens or place in a wrap for a quick easy lunch!
