Walnut Cinnamon Banana Mini Loaves

Walnut cinnamon banana bread *healthier version/sugar free


- 3/4 cup unsalted butter (at room temperature) * 1 1/2 sticks - 3/4 cup agave nectar - 2 eggs - 1 tsp of cinnamon - 1 tsp of vanilla extract - 3 ripened bananas - 1 cup all purpose flour - 1 cup oat flour - 1 teaspoon baking soda - 1 cup walnut pieces


1. Preheat oven to 350 degrees 2. In a large bowl, combine the agave nectar and the butter. Mix on low. 3. Add eggs and blend. 4. Add vanilla extract and the bananas and mix for about 1 minute. 5. Add flours, baking soda and cinnamon and mix until blended. Fold in the walnuts. 6. Spray mini loaf pan (or 2 regular loaf pans) with non-cook spray. 7. Bake for 25 minutes in mini loaf pan or until knife or toothpick comes out clean. If using regular loaf pans, it will take about 45 mins. 8. Remove from the oven and let cool on a wire rack for about 30 - 45 minutes. 9. Remove from pan and serve.

Note: - This makes about 12 mini loafs. Make sure you only fill 3/4 of the way on the mini loaves. This gives them space to rise. - Oat flour is very easy to make. Just put your oats in a blender or food processor and blend until flour texture.
